Bacon Ranch Chicken Salad

I’m going to make a bold pronouncement: Bacon Ranch Chicken Salad is a perfect summertime meal.
Seriously! It comes together quickly, doesn’t have a bunch of ingredients and it’s sooooo yummy. And serve it like in the picture above and it’s even low-carb and possibly keto? (I’m not sure as I don’t subscribe to a keto diet. Feel free to correct me if I am wrong.)
So here’s the deal. As I write this to you, it is 2020 and we are in the middle of a pandemic. I originally wrote this blog post in…2015? Maybe? I’m not sure. Anyhoo…here’s how I’ve changed in that time.
I get so freaking annoyed by the blogging style (to which I used to subscribe) that requires readers to go through 57 paragraphs to get to the recipe!!!
Now sometimes I have a story behind my recipes. And I intend to tell it if I do. And if that is ever annoying, I’m sorry. I sometimes get nostalgic, so I cannot 100% guarantee that recipes will cut straight to the chase but I am working on becoming that person. Because, really, you probably came here from Google and you probably just want the dang recipe, amiright?
Anyhoo…enough small talk. Let’s eat. 😉

Ingredients

Instructions
  1. In a bowl mix together yogurt, dressing, mayo, spices and hot sauce.
  2. Give it a taste. I add the onion powder and garlic salt because I find that one tablespoon of ranch dressing gives a HINT of ranch but it doesn’t come through too strongly. So I beef it up with these spices. I suppose you could also try just adding a bit more Greek yogurt with some dry ranch mix but I used what I had on hand!
  3. Adjust spices to taste.Add chicken meat and mix in thoroughly. Add bacon bits and mix again.
  4. Refrigerate until ready to eat!

  1. Hi, I'm five weeks post op so I know this recipe is a ways off for me but I was wondering something. I LOVE and I do mean LOVE bacon. I mourn that I will never again be able to have a nice thick rasher of maple cured bacon….but that being said I read that you use bacon bits. I've used them in the past and the soy upset my old stomach making me burp a lot. What if anything can I do to get my bacon fix on or am I to just hold onto the memories of those Sunday mornings? Thanks, I hope this is not a dumb question.

    • Use real bacon bits or a piece if bacon crumbled. I see my job as to give you the lowest cal variation of something as a base recipe. From there, as my tag line says, play with your food!     • I’m 6 months p/o. I eat bacon. I can slowly endulge in one piece…… but its amazing. I. ant do pork anything! bacon on Sundays…..mmmmm. My point……..you will. Small. small. portions of protein works best for me. (except for my shakes) Good luck in your process!
