  1. With a mixing bowl/hand mixer or in a stand mixer, beat together cream cheese, sweetener, cream of tartar, vanilla and protein powder until well mixed. Remember to scrape down the sides of the bowl a few times to make sure it’s all getting mixed in.
  2. Make sure jelly is drained of excess liquid hanging out in the jar, then add it to the cream cheese mixture. If you are using diced strawberries add those too. Use a flat spatula to gently fold it into the mixture. (Fold = turning the mixture again and again to get something distributed throughout but not necessarily combining it. You want to still see swirls of strawberry jelly in there.)
  3. Transfer to a large piece of plastic wrap, cover and shape into a ball. Refrigerate three hours.
  4. When read to serve, place crushed graham cracker or fiber cereal crumbs on a plate and spread them out. Place the cheese mixture in the center of the crumbs and use your hands to cover the ball. Refrigerate until serving.
