Cajun Shrimp & Sausage “Pasta” with Butternut Squash
Spiralized vegetables make a great substitute for starchy pasta. This recipe uses butternut squash for a lightly sweet offset to the Cajun prepared shrimp and sausage. You can turn up or tone down the heat to your liking!

  1. Spray a pan with nonstick cooking spray, add sausage cook until browned. Add in shrimp until slightly browned. Remove from pan.
  2. Spray pan again and add onions. Cook one minute before adding tomatoes. Cook two more minutes (tomatoes may release water).
  3. Add tomato paste and water (up to 1/4 cup) if mixture is thick. Add seasoning. Simmer 2-3 minutes.
  4. Add noodles and cook 10 minutes or until noodles are soft. Add cooked shrimp and sausage in the last 5 minutes to simply warm through. Garnish with jalapenos and cheese.
